Lasagna: Italian comfort food, layer by layer
In short: lasagna is an oven dish of layered pasta sheets with sauce and cheese. There is no single lasagna: in Bologna it is made with ragù and béchamel, in Naples with ricotta, mozzarella and meat. At Benoti it is a classic lasagna with a pork and beef ragù.
The best-known varieties
- Lasagne alla bolognese (Emilia-Romagna): ragù, béchamel and Parmigiano, sometimes with green spinach pasta sheets.
- Lasagna napoletana (Campania): a festive dish with ricotta, mozzarella, meatballs and tomato sauce, traditionally eaten at carnival.
- And countless family versions, with vegetables, fish or pesto.
What is a ragù?
A ragù is a meat sauce simmered slowly until the meat and tomato melt together. The longer it cooks, the deeper the flavour.
