Seafood pasta: scoglio, prawns and lobster
In short: allo scoglio literally means "from the rock": pasta with seafood as fishermen found it among the rocks along the coast. It is a classic of southern Italian coastal cooking, light and full of the taste of the sea.
What is pasta allo scoglio?
There is no fixed recipe: it depends on what the sea brings that day. It often includes mussels, clams (vongole), squid and prawns, with garlic, olive oil, parsley, a splash of white wine and sometimes a little tomato.
Seafood pasta at Benoti
- Scoglio: pasta with a selection of fresh seafood, prepared the Italian way.
- Scampi: a light tomato sauce with tiger prawns and basil.
- Astice e Gambas: black pasta with lobster bisque, lobster and prawns. Astice is Italian for lobster.
Prefer pinsa? Then the Pinsa Scampi and the Benoti with tiger prawns are a good choice.
Which wine?
Seafood calls for a fresh white wine: a Vermentino di Sardegna, an Arneis from Roero or a Pinot Grigio from Friuli. Read more in Italian wines on our list.
Frequently asked questions
Why is the pasta black?
